Laugh if you must but this is my very first mushroom ever grown. It is a pearl on straw from the chicken coop. Special thanks to quadman who took enough interest in me to try and help with my questions so far.

WOW.. they look awesome.. 
there is a strain in china which are whitish and have kinda huge cracks on top, look like popcorns ... i have heard they are the most expensive shiitakes in the world.

As far as I know the cracked shiitake is caused by growing conditions, but maybe some strains are more prone to get that form, I don't know. The donko form on shiitake is caused by lowering humidity during fruiting, so the cap cracks and is more valuable than normal shiitake. The flower shiitake is more cracked than donko form, and is caused by different growth rate between the inner part and the surface of the cap, specially during pinning. This is promoted by temperature fluctuations between night and day (low temps and low humidity during night and high temp and high humidity during day). I think direct sunlight could help too. It would be easier to grow shiitake form on winter I guess (if growing outdoors).
