My second LM grow using hardwood fuel pellets. The bags are in my small indoor greenhouse with a humidifier and fan. Thinking of harvesting this one before too long.

Nice job HappyCabbage, what species is that if you know, is it H. coralloides? The starting of the spines look curious.

Thank you! I believe it's just H. erinaceus, maybe the spines are forming like that due to a lack of FAE?

No they look perfect, I just thought it might be a different species because the spines that are starting to form looked more club like to me then what I'm use to and pictures I've seen. You did a really good job.

What strain is that? Great clusters! Amazing on straight straw. I tried that for a while but never managed to have clusters like that.

The first and second photo is S-100 and third photo is S-300, from a spanish spawn producer. The oysters grew meaty and dark because of the winter temps, but they also grew slowly. I used high spawn rate to act as supplementation.
frog48, nice shiitakes! how long are you ripening those blocks? do you fruit them after 50-60 days or do you ripen for 90+ days?

I incubate 10 weeks. But twelve is even better for this strain (3790). What do you consider as heavy spawning. I'm spawning these buckets at about 6 % It's a mix of straight straw and wood chips, pasteurized in hot water for about 2 hours. I can't get it right though, too high contamination rate to be profitable. I want to use wood chips because we're on a farm with about 60 hectares of oak and ash. I'm using a bit of shredded straw to fill the gaps. Probably needs longer heat treatment with raw wood chips.

Frog, just a thought....maybe process those wood chips again. Like pulverize them to more of a sawdust consistency?

I'm using about 14% spawn (500g rye per bucket of 3500g wet straw). What temperature are you pasteurizing at? what contaminants do appear? green molds like trichoderma? black molds? bacteria? do the contaminants appear first on straw or on woodchips? are you incubating at more temp than room temp? are you stacking the buckets during incubation? if you could give us more details we could help you to discover where the problem is 
Maybe those fresh oak chips are too acidic, favoring molds. You could try the lime water bath method to raise the pH on straw and chips.

Hey you all,
Thanks for comments. @Quadman, finer particles would be better but too time consuming to process the wood chips again. Inocybe,I've got mainly trich problems. At ten, twelve days it appears, so I presume its a pasteurization problem. I can't use lime because the whole farm is organic and lime is not allowed in the EU. Just like wood pellets because I can't prove that they're not treated with fongicides. I'm trying to copy the system of these canadians on a smaller scale because I mainly do shiitake. It's been ages that I've been working on it but the oysters just don't seem to like me.

I have read that people grow oysters in oak sawdust with no problem but my experience is that oysters don't grow well if at all on oak... Oak pellets on the other hand are not to be taken as oak per se because I heard from more than one seller that they usually contain willow and other tree species. Maybe on the other hand, american oak is more oyster friendly.
Shiitake likes oak better when tanines are leached off the sawdust, this might work.
Another way to raise the ph a little bit is wood ash, you can add it towards the end of the hot water bath and probably qualifies as organic.
Very important is not to let the sawdust get mold before pasteurization, although you kill it when pasteurizing, it makes the substrate it was growing on unfavorable for anything to grow on it.

I grow shiitake mainly on sweet chestnut sawdust from a mill just next to my farm. I'm in an area where chestnut is pre dominant. Oysters don't grow on chestnut, too much tanine, shiitake doesn't seem to bother about that. I tried wood ash, didn't see much of a difference. What exactly is your experience with oak and oysters?
