Yep Bratslavian Blue Oyster. Culture is from MorePies. They were doing a little better with the cooler temps we just got away from. Went from avg. .75lbs per 5lbs block first flush down to about .5lbs per 5lbs block first flush. Though this was only from 2 runs vs about 25 runs over the winter so there may be another variable at play I havent identified yet.

Coming out of the closet. Setting up a dedicated growing room feels pretty exciting! Building a clean bench will be the next step in the process.

At the moment Im growing around 25kg(55lbs)/week and I supply 5 restaurants. The problem I have is to find new chefs, here is very difficult.

I'm asking 8.4€/kg on them, this means around 5.8$/lbs. And it's expensive compared with the price of the big supermarkets(around 3$/lbs), but the quality is crap on them.

The few restaurants I could drum up business in a few years back would take oyster for $5 or Shiitake for 9-10$ per pound.
