So i don't have a clue what I'm doing I've never messed with edibles. I haven't even misted this thing it just keeps going.
So... When's it ready to pick?

Extremely light growth on these plates? This is a clone of a wild oyster I found 2 days ago, almost didn't see this growth

Once the edges of the cap start to wrinkle upwards. Very soon.

Depends on the substrate, they get massive on certain mixes, but usually about 2 - 10cm caps. There should be a white edge to the cap, either turning up or splitting at the edge.
For illustration purposes, these are 10-14cm caps, outdoors.

Or not liking the recipe, wild means it's not yet accustom to domestic methods. It was most likely growing in a 100% (or near) cellulose environment.
Agar is not cellulose, so it must adapt which takes time.

Harvested that gold oyster yesterday only 40 gram but I didn't even put it in an FC just put it on the ground and it did its thing.
But I do have some king oyster that's are beginning to pin and those are actually in a make shift FC.
Another question once pins are formed on king oysters can I move them to a higher temp say 70 degrees?
My thought is let then colonize at room temp then put them in my basement once they hit 100% to form pins then move them upstairs? The colonization rate is pretty slow at 60°f

They are probably the most aggressive fruiting oyster's you will see, but yes they love water, they even built specialized funnel caps for rain.

That depends, above 64.4°F they will stop producing pins, fruits have a slightly higher chance to abort, or contaminate. I found 60.8°F to be the better maximum, pins will produce, less likely to abort, some pruning may be needed.

Colonize at 68-74°F, after full colonization, stay at this temperature for another week, take to fruiting and reduce the temperature.
