Ok on the 18th I had this jar fully colonized, I removed it from the room it was in and placed it in a cooler room for the next week to finish colonizing within. Today 5 days later I checked on it and noticed these side pins Now my question is what do I do now? I was originally going to let it go a full week then dunk and roll. Do I still do that, is there anything I should do to the pins????

Your jars couldn't have given you a better sign to initiate fruiting
Dunk, roll and fruit them

If it's fully colonized and starts pinning invitro it's ready to be birthed, dunked and rolled
IME those taller regular mouth half pints will often pin before the week consolidation time, my guess is where they usually take a little longer for the last bit in the bottom to finish than the wide mouth half pints.

I actually had this happen to me last week lol. The jar wasn't even fully colonized though, I'd say maybe 90%. The trouble with in vitro pinning is that if the cake isn't fully colonized yet, depending on how far along it is, the pins could grow faster than the myc colonizes. If they get too big you may have some trouble birthing the cake as they are pressing against the sides. All in all its not really a problem. Just a hassle. But you said yours is 100% so like everyone else said, they're ready to dunk and roll.

24hrs would be ideal to maximize moisture absorption, since the mycelium sucked up a lot of it while colonizing. I'd say do no less than 18 hours. And don't worry, dunking for 24 hours won't hurt your pins.

In this situation I'd have just taken them out and rinsed the uncolonized areas off before dunking

It was the very bottom of the cake so I just birthed it and scraped all of the uncolonized substrate out with a sterile blade and then dunked it. Currently it's pinning like mad.
