I cut the poly amount in half. Let's see how it does. What else can I do to promote better air exchange?

Blow on it a few times per hour like it's a spoonful of steaming hot spoonful of chicken noodle soup Proven to increase yields by a ratio of 2.67

Chickens from last year. They were growing on some cut logs in a campus of an old abandoned asylum.

I used Franks pasteurization tek. I brought them up to 140 in a pot on the stove, hit the timer but didn't regulate it quickly enough and the temp went above 170 for about 10min before coming back down. I'm pretty sure it partially sterilized it

Yep, that's what happened. Pasteurizing in jars can be finicky becaue the the glass jars, and the small mass & density of the substrate materials causes heat to transfer through them materials, and jars very rapidly. The trick is to find out how high the internal temp of your materials climbs with out going over acceptable pasteurization temps once the stove is turned off, and adjust the heating element according, or you could do it the slow way which is don't let the water rise above 160F holding it there until the internal core of the substrate materials reaches 150F, then adjust the heating element accordingly to sustain 150F internal core temperature.

sounds plausible. I know of a lot of folks who use those roasters, but pasterize in bags instead of jars. I pasteurize the old school way using spawn bags, and water as the heat transferring medium, so I'm not sure if using bags with those roasters is a must. I, or somebody more experianced would be able to tell you something definitive if you can would display a pic of your roaster.

I think these would be our perfect bulk pasteurizers. Fill bags, but not too full so it reaches temps quickly, hang bags from a BBQ grill with laundry clamps, set the temp and time, and hang back n relax.

Nah dude you don't suck. These things have a learnt curve. I'd consider glass tubes for slanting. They aren't as weak.

I use discount vials for Slants. They've been good so far.
And hey, don't feel bad- my first attempt at Petris as opposed to PastyPlates I PC'd about 30 of them
