Some sources say toxic; able to cause GI symptoms, but, when same source says the following:

"Despite an attractive appearance, this inedible species is likely to cause an upset stomach if it is eaten.
(The very similar Leratiomyces squamosus is known to contain hallucinogenic psilocybin/psilocin.)"

...I must say I don't know what to say. The former might be right but I believe the latter is wrong.
Even Stamets, who includes L. squamosus in his book as Psilocybe squamosus, doesn't make any
claims that it is active, although he is quite liberally proposing possible hallucinogenic properties in other
species, like Stropharia aeruginosa. I deem that he doesn't really know for sure, i.e. lacking any scientific
data to point in either direction.

When identifying this species here on the forum, several members state L. ceres as toxic.
But a site like Kuo's mushroomexpert does not mention anything about toxicity.

Then again, several field guides will say the related Stropharia aeruginosa is "suspect" or "maybe toxic".
How do they know, and where are their sources?

I have never seen a single point of scientific reference for such claims. So I might as well believe that some species are
labeled toxic based on fear and deep-set mycophobia.

The only thing I know for sure is that I'm not going to eat any mushroom to find out if it is toxic of not.

Do mushroom toxins affect insects in the same way as humans?
Is amatoxin deadly to life in general or just mammals?

I'm not well versed with the actual process of amatoxin poisoning in humans, but it wouldn't
surprise me if certain toxins that are harmful to humans, might be less so to other organisms.

It is apparently different with Orellanine though, I've read that it is so toxic that, if a piece of
Cortinarius rubellus/C. orellanus tissue is placed in a glass of water, the tissue will keep
from rotting because the toxin kills all the bacteria. Orellanine will also kill plants because it
is damaging to photosynthesis, and is thus analogous of certain herbicides.

I don't know for sure but I doubt all toxic (to humans) mushrooms are toxic to all insects. I do know that a compound, which is toxic in one/some species, it  is not necessarily toxic to all species. For example marijuana is classified as being toxic when ingested by housecats.

I will often have the pleasure to watch a mushroom age over time. Sometimes on its death, it doesnt look like it has not been touched by any critters. I assume they are toxic mushrooms.

Probably in the same sense that Psilocybe species are listed as toxic in some field guides.

Leratiomyces ceres causes diarrhea when consumed raw.  It might be edible cooked.

I agree with this.

I read about squirrels eating mushrooms which are toxic to us, but they are not harmed at all, something about them having different nerve receptors enables them to do so without harm.

But we don't know what poisons they contain.
