ID Request - Bay Area - multiple edibles (Rusullas, milkys, boletes)

After growing for so long, I finally went on a proper mushroom hunt in Monterey CA. I went with a Russian family who pointed out all the ones they harvest / eat but It'd be nice to get proper IDs on these.

Mushrom #1 - red russula

My friend told me these are dangerous because they look like poisonous amanitas, but otherwise, he advised to par boil them before eating. I did the nibble test on these and they had a pleasant crunchy milky texture and not bitter at all. I really want to eat these but I'm a little sketched by them. These were growing all over the place!!



Mushroom #2 - dark red russula

Same as above. My friend didn't distinguish the two. These are also not bitter when I nibble them.



Mushroom #3 - saffron milky cap?

I remember my friend saying these are "saffron milk caps" and they certainly look like them but I nibbled one and they are spicy and bitter. They also don't exude any liquid. I forget if I'm suppose to parboil these ones or if it's mushroom #4 that I'm suppose to parboil (will do both just to be safe). I've had these pickled before but they were not bitter. These were growing all over the place too. I really want to pickle these and kind of like the spicy bitterness.



Mushroom #4 - milky cap?

These have white latex when cut. I forget if I'm suppose to parboil these or if it was mushroom #3. It's possible these are the "saffron milk caps" my friend was referring to and I got them confused.



Mushroom #5 - mystery bolete

My friend did not recognize these but said they were probably safe to eat. Just eat them separately so as not to spoil the other boletes we got.



BONUS mushroom - porcini

Is this Boletus Edulis? Mainly just showing off here. My mom split off from our group while we were hunting and called and and said she found a "big" mushroom. I was joking that she must have found giant porcini. Turns out she found the biggest porcini of them all.

Narrowing Russulas down is a bit of a task, we have a good number of them in California and many of them look similar.

1: What habitat were they growing in? Were there any white-capped fruitbodies nearby or were they all red? Were the gills cream colored or yellow? Did the stem bruise gray at all? They could be R. californiensis but make sure you eliminate R. cremoricolor. Russulas are not dangerous because they look like Amanitas, they are dangerous because they look like other toxic Russulas.

2. These are a different species. If you say they are not bitter it's possible they are in the R. queletii group, but more info is required to key them out.

3. These do appear to be in the Lactarius deliciosus group, but it's important to note that these are not quite the same as the L. deliciosus found in Russia. They are edible but they are not very good.

4. Are they bitter? They could be Lactarius rufus which is poisonous, the white latex supports this.

5. Maybe a Tylopilus sp., more info and photos would help.


As I've stated already, it's important to provide as much information as you can and clear photos. Also, I'm sure your friends are knowledgeable hunters, but it's very important to keep in mind that mushrooms in Russia are NOT always the same as mushrooms in California. It's not uncommon for people from other countries to mistake poisonous mushrooms here for something they would eat back home.

I uploaded a few better photos.

1. Gills are cream color. Two of the small ones in the back are actually of a different species (possibly R. cremoricolor as they are hot/bitter when I nibble them).



2. These are not bitter and bruise the same as above.



4. I don't remember these tasting bitter at all but after boiling them in water, they did taste a little bitter. This is definitely the mushroom they told me to boil first. Fits the description of Lactarius rufus except they weren't bitter/hot/acrid when I tried them raw. I ate a little bit.

5. Some better photos. The skin on the stem was very hard and the flesh extremely firm. Didn't have a particularly strong taste.
