please Help with rye
    #23940208 - 12/19/16 12:17 PM (7 years, 1 month ago)

I just prepared the rye 20h soaked and 10m simmer but the grains are bursted and feel starchy. Here are some pictures I would say that 10 to 15% are bursted. What should I Do.

You can always try the grain, it doesn't look too bad. Next time, if the grain looks right, it probably is right. The simmer is just so you can use steam evaporation to dry the grain, so you don't need 10 minutes, just however long it takes.

So ok. I don't need to worry. I'm trying to hand pick the burst ones out. Doest it really matter if I do this or I'm over my head and just load my jars? What about endospores?

I don't believe in the long soak myself, it is said to germinate endospores for the PC cycle but :justdontknow:. Lots of people use no soak methods all the time.

I wouldn't worry too much about the burst ones. Handpicking them out will take ages, and it doesn't look too bad to me. Maybe the pictures crap but it looks OK.

i used rye a handful of times.

anytime it was 'starchy' it always looked like shit after pc cycle. if thats the same starchiness we are talkin about id toss and try again.

it doesnt have that clean look that rye had when i used it... this was a long time ago however.:stoned:

It feels like it has small particles. But not mushy. I did like 30 pounds of rye. But its not mushie what should I do. I'm currently hand picking the burst ones. Here are some more pics.

I only use rye. That rye doesn't look great, but IMO it is usable. Picking out burst kernels is fine, but it's probably pissing into the ocean (or at least a lake) for 30 pounds of rye. Was that 30 pounds of dry grain?? How did you dry the grain after simmering? If you are too rough, like tossing a lot of hot grain around in a colander, you will burst more kernels. I gently drain in a colander and then spread my hot grain out all over a countertop in as thin a layer as I can and let it steam off.

When you use bigger loads of grain all at once, it's harder to get the tek just right. Based on this experience, I would recommend soaking for less time next time - try 12 hours or so. In my experience, longer soaks are a big contributor to mushy grain.

Thanks freespeech. I'm a little bit confused some people don't soak the grain and others soak for 10 to 12 hours. So in my opinion just do both and see the results myself ?. Any help from personal experience?

I have pretty much only ever done RR's rye tek with the variation that I described above regarding drying the grain. It works well for me and I haven't had a want or need to branch out from that. If you are not getting optimal results, then yeah, make changes to your process or try a different tek altogether. If I were you, I would cut down the soak time as discussed and also watch the grain as you boil/simmer it - if you see kernels bursting before 10 minutes, then cut the boil short.

I could see some unique issues arising from doing 30 pounds of grain. Did you rinse the grain thoroughly?  Not rinsing the grain enough could leave it more starchy. Some rye is cleaner and some is dirtier, so there's no one global number or amount of rinses - just rinse until the water is pretty clear. Did you soak all the grain in one container? How far above the level of the grain did the soak water come to? I would guess that not having enough water in the soak pot could concentrate the starch in the soak water. Maybe try smaller batches of rye for the rinse/soak/boil process.
