I'm following this tek https://www.shroomery.org/forums/showflat.php/Cat/0/Number/12517524
And my grains feel slightly mushy. Should I simmer for 10m or not. I have read that people skip the simmering part please help, when I squish a kernel feels kinda mushi

That's an old tek. For next time you might want to use this or this.
Imo, if they feel mushy they're done. Just let them hit good water content and fill your jars. Test with a paper towel or your hand.

(Grain-to-Grain) Damion5050's Coir Tek (I use 5.5 - 6 quarts of water instead of 4. Also ignore step 13 and ignore the monotub completely. The only purpose of this tek is to show you how to make a simple substrate. I also add gypsum to it but not necessary) Spitball's Monotub Tek (A liner isn't necessary but is useful) Use 6500k lights throughout the whole process. When you wake up, turn the light on. When you go to sleep turn the light off. It's as simple as that.

Kush has a link to a grain prep that is easy to follow and works well. It seems that as soon as you start 'popping' the grains or overcooking in general you have issues. I had terrible bacterial issues before following EvilMushroom666 grain Tek. Follow one of them, but I can vouch for this one.
