How can one tell the difference between a normal amount of metabolites and an infection?

like what size is fine?
I have a few jars that seem to have metabolites. They're probably fully colonized because similar ones are forming pins.

The presence of metabolites is indicative of bacteria. Also the thick cottage cheese mycelium morphology is also an indication that mycelium is growing over bacteria. Clean jars have literally 0 metabolites, and nice looking thinner myc than bacterial myc. I guess I should have been more clearer for you. I was just IDing contams, not giving advice..
Bacteria is vastly different from mold contaminations. It doesn't spread like molds do, and mycelium seems to contain it much easier provided the conditions are ideal. You can very easily see fruits while growing with a bacterial substrate, and in fact I encourage new people to attempt to fruit bacterial things. The jars you posted before could quite easily see fruits.
The thing that makes bacteria hard to work with, is the fact it weakens the myceliums network enough for other molds like trich to germinate. If any of your jars that you've birthed start getting moldy early it's because of the bacteria present, and you need to toss them before the molds start spreading to your other weakened substrates of bacteria.

Please elaborate? Why don't bacteria spread, because the cube mycelium makes multiplication hard/impossible?

Molds spread via releasing spores into air currents. Bacteria spreads by contact. So an animal brushes bacteria it is now in their fur and spreads to another location by them. Bacteria can also spread by attaching itself on dust, pollen, or even water vapor, but that isn't at all comparable to the spreading capabilities of spores. And the fae of fruiting cobbled with mushrooms defense network should practically stop bacterial growth altogether. Still tho in the end it weakens the myc defensive network enough for molds to tear right through the myc, which is why it's never ideal to have bacteria, and generally the cause of molds in fruiting.
Molds can spread easily trillions of spores within a few minutes through air currents. Bacteria wishes it could do that

Ah, thank you very much!
Yeah like 1/2 of my jars had metabolites :\
haven't had that before, my 3rd grow. Maybe it's because it's a different mushroom (did oysters the 1st 2 times) but more likely I need better sterilization.
I assume a tiny bit of metabolites is fine though, if it's not slimy?
