picking/harvesting mushrooms with some of them "lagging" behind

Before I begin, I'd like to thank this forum for constantly being helpful (I finally have some mushrooms of my own!)
Some of my mushrooms are very close to being ready to take for consumption.
I have a few others that are probably 5-6(guessing here) days behind them and more than are about 5-6 behind them that are just pinning now.
Lets assume the ones that are closest are ready tomorrow, will anything bad happen if I harvest them when they are ready? I know waiting too long will ruin them, but there are big gaps between the sets of mushrooms. Some have only begun to pin like yesterday.

Harvest them individually as they are ready. Are you doing the pf tek or a monotub? For the pf tek you can simply twist and pull, there shouldn't be any part of the cakes that comes off. For a monotub, I tug the fruit a little bit, then, either twist and pull, or cut it at the base with a knife, based on the resistance when I tuged it.

I can understand cutting at the base when there are underdeveloped fruits attached in a cluster. What would be the benefit of cutting vs twist and pull on fruits that are growing on their own?

If the pop up easy enough nothing wrong with a twist n pull.

I actually find it easier to twist and pull on a monotub when the fruit is in a cluster. I carefully tilt the fruit away from the cluster, and it comes right off, without any substrate or other fruit's chunk

Do I want to consume the stem? B+ strain btw.
Also, im probably going to eat a few of these fresh. I'd like to reach level 3, how many grams (fresh) would be that?

It depends on the shrooms and the person, but if I wanted to reach level 3 with my shrooms, i'd take 33 grams of fresh mushrooms, or 3.5 grams dried. Yes consume the stem, the potency isn't any different between the caps and the stems, and the stems weight much more. So eating 3.5g of caps is the same as eating 3.5g of stems, but eating 5 stems will give you a stronger trip than 5 caps, because of the weight.
