I would pick one that suits your environment, and you like. The links specify temperatures, substrates, yield and so on. Under the Shroomery banner there are 4 menus, "Home", "Mushroom Info", "Community", "Gallery".
If you have further questions, just ask here. Good luck, Ferather

Pluerotus pulmonarious or Phoenix Oyster would be a good choice to start with. It performs in a wide range of temperatures, tastes pretty good, and I quite like the ruffled edges on the cap. And they grow on just about anything.
I suggest finding a Pasteurization based tee, buying a bag of spawn, and goin nuts!

I was wondering the same thing. Are there certain varieties that perform better in a dry setting? My grow area is kept at a steady 70 - 73 F, but it is winter where I am and the air is fairly dry. The RH in the room is usually 30 - 35%, even with a humidifier running.

If you have humidity issues try this method. Water like plants every 2 days.

Run an evaporative cooler into your humidifier setup. You should see a noticeable temp drop and bump in humidity.

I was pretty fortunate to stumble upon that one! Biggest colony I've personally seen.
