Spelt and other grains

I have been experimenting with a few different grains due to my situation.
I live in a place where even finding fresh bread is a pain in the ass. But i have been going to this upscale grocery store and they have a huge organic grain selection.
They have sorgum, millet, wheat berries, farro and many others.
This morning i am soaking spelt, going to prep some jars for some tamp and pes hawaiian cultures.
Anyone have any experience with spelt, straight sorgum, or farro? Which one is the best?

Depends on the prep, ferro and spelt is basicly just wheat. If you like the no soak hard boil method then Spelt. If you like a mixture prep or just soak method then go with sorghum. But if you what most knock up points then get the millet. Since im sure your paying a shit ton per pound.

I use these LI inoculated tubs (pp5) which doesnt matter what grain u use. I follow some of mudas recipes and some of my own, yields are decent.

Nice, i was just looking at muda's bottle tek recently, need to give it a shot.
What im wondering is if spelt is just as good as rye berries when it comes to nutrients and how well they retain water after a soak and simmer.

IME, spelt preps more like wheat than rye as far as simmer/boil go and tends to burst if left too long.
