Homemade wine

Anyone here make wine? Going to be making a batch of tangelo wine from my tangelo tree. I've made lime in the past and cranberry. Any advice tips?

I have no tips, I have had relative success with crude ferments, I have taken a liking to mead, or Tej, honey hooch and
ginger beer, i just let ginger and sugar go for a while and it start to get mildy alcoholic after a while, good for mixed drinks..
I tried making actual wine once with freshly mashed grapes and was unsuccessful cause the variety i used to wild picked and low of sugar,,
i have an aged maple syrup ferment, it is actually delicious and has a distinct flavor and strong character
I believe it was made by mixing one part active fermenting honey, one part ginger bug, one part maple syrup
and i let it sit for like years,, the one i got is like 3 years old.
I also have an "ambrosia" going, one part ginger bug, one part Amita muscaria, Var. Americana, Guessowi, its been sitting for a while and might have turned alcoholic, i'm kinda scared to even drink it,, just simply cause its technically a toxin..

Speak to the yeast as you add it - thank it - show some appreciation.
Only brew in a good mood and enjoy it - set a whole afternoon aside so you're not rushing.
Play some damn good music during the process.
Keep the wine somewhere it can sucks up the good vibes as it matures.
Give some of the final wine away as a gift!

Lime? that's a lot of squeezing! Are you measuring the sugar content of you juice? If you don't have a hydrometer and cylinder they're good things to have, not that you need them, but they give you a better idea of where you're starting from.

Id say pick a nice white wine yeast like Narbonne or something similar and make sure to pitch the correct amount of yeast after a proper/gentle rehydration as per directions.
Highly acidic environments are stressful on yeast and you may need to slightly overpitch your yeast and allow for a longer fermentation than a normal wine at a more normal pH. (If acidic enough it might not ferment at all)
Be sure to use add yeast nutrients like DAP and a yeast extract because there isnt enough nutrition in just tangelos for cell growth and reproduction.

Forgot to mention, ferment steadily in the mid 60s, try not to let the temp rise into the 70s if you can avoid it

And use bentonite to help clear up your wine. Don't even mess with the old float method of checking rg. Get a good 60 dollar brix measuring refractometer. It with serve you well for beer and wine.
