Have those cakes seen a mister? SpraY some water on those things state.
You did yourself no favours by birthing those cakes early. In fact it's recommended that you let them consolidate for at least a week in the jars after full colonization. Those cakes are going to take a while to pin yet.
I would redunk and mist the cakes everytime the verm starts to look dry in the chamber.
Also you need about 3 or 4 more inches of perlite and you don't need a hygrometer in there.

Yeah I have noticed that on most grows the mycelium usually consolidated the new verm after the dunk. His cakes did shrink in the jar, is that usually a sign to start waiting the 7 days before birth, or is that a sign to birth them then?
Also his most frequent question is how much to mist? There really is no good rule of thumb at least that I could find.
PS: the meter was in there for a quick read, he doesn't leave it in there 24/7 otherwise pretty sure the thing would stop working.

Start misting your cakes man they are dry as fuck. As for that cake that is pinning, I would suggest you bottom water that thing to make sure it gets enough water. There's a link in my signature that will teach you the ways of bottom watering.

Drench those cakes with your mister. You want it to glisten with moisture. As soon as it starts to dry out then give it a generous misting again
Edit Wait 7-14 days after full colonization of the jar before birthing

I'll have him do that pronto, also did you notice the green in the pics, might I ask your opinion on that? Pic 2 around the top edge for instance.

That's blueing, which occurs when the mycelium is stressed. In this case, it's stressed pretty hard from being dry. Thirsty mycelium is the most common reason for blueing. Yeah, I'd probably just re-dunk as was recommended above.
