oven sterilization

Hello.  I'm doing fractional sterilization on some popcorn jars, and I was wondering if anyone has ever tried sterilizing them in the oven?  Say, 350 for an hour or so?  I could put it in with a burrito and eat afterwards too... :grin:
I know that it is dry heat, but if the top is screwed on air tight it shouldn't matter, should it?  Although, it might explode.

I would make a little hole in the top of the lid and close it with cotton/polyfill so that the air can move out or in. Otherwise it probably would destroy the lid.

Oven sterilization is tricky.

I haven't used the method very much myself. When heating a substrate to higher temperatures you increase the effectivity of your sterilization, however you also take the risk of caramelizing the sugars present in the substrate. You will also lose moisture in such a hot and dry environment. There is a balance between effective sterilization and heat. You must find that balance and make it yours!

Unless someone else has tried this method, you may be up for some experimentation.

And at 350 you are definitely cooking the food. not just sterilizing it. i suggest lowering the temperature to under 300. write back if you have any success, i have been wondering about this.

I agree, but according to multiple online microbiological sources on sterilization, dry heat should be used between 2-3 hours at 160-170 degrees C in order to kill endospores.  9/5C+32.5 ~= 320-350 degrees F.  Now, how to do this without killing the popcorn(or any other grain for that matter).

Anyone with a better understanding of all this out there?  I'm going to try some experiments in the near future, but I'd appreciate any constructive input before starting :smile:.

I'm not a pro, just speculating. What if you were to use a polyfilled hole and just put too much water in the jar, then when it was done cooking, let it cool upsidedowl so the extra water comes out. that way you won't cook the grain cuz the steam inside keeps the temp down, and you'll have a steam sterilization rather than dry, which is more effective.
