First time proper pasteurization question

Hey guys....So im attempting to do my first pastuerization...but I have a quick question...I see in Frank's Tek he instructs to put the heat on medium, I just started with mine high and the water began to boil for a bit...but the temp of the substrate didn't raise above 165 170...my concern is the water r certainly got higher then that if it was boiling l...So did I accidentally partially sterilize my sub? It's straw hpoo and verm....any help is greatly appreciated!

You need to bring the heat up slowly. Or quickly then cut the heat.
When you heat it too quickly it does not distribute the heat evenly.
Chances are it is partially sterilized 
Edit: lol just reread your post I'm stoned
If your temp didn't go above 170 and was above 140 for 1 hour you should be fine. Would also wait for someone else to chime in

Outside of the jars will be much hotter than interior and will always get partially sterilized. When I pasteurize I heat on medium until the internal temp of the jar hits 110. It'll work up to 150ish and stay around there for the whole 60 minutes

Shiiiit man that sucks...I had it on high cause I soaked my straw outside so it was cold, when I stuck the thermometer in it was registering 60 degrees....and even when the water was boiling it still showed at 60...it didn't start climbing until I turned the heat off....and it is only showing 151 right now...

I've been using a 24 lb turkey roaster for pasteurization. The inside and outside are usually the same temp.

Yeah you're in the clear. Just let it cool slowly overnight to let all that thermophilic bacteria recover nicely.
@von in my pots on the stove the water boils sometimes, and the temp spikes to 180 at the edges. Still hasn't ever caused problems. How long does it take to get to 140 internal on a roaster?

My starting temp is usually 97 takes an hour~ but I dont have a to fuck with it just set my temp go chill.
Once it goes off i set a timer for a half hour (I keep the heat on) once that goes off its about 145-148~ then I just remove.
Best 45 bucks I ever spent it's Basically an oven, made some potatoes in it the other day .
Edit: should add that while bringing my temps up I set to 170 and the outside is genally 6-8 degrees warmer then interal that's why I just remove at 30 mins
