Any suggestions for cooking lions mane?

They brown up so nicely, but I can't figure out how to get rid of the chewiness in the center without burning them.  Any advice?

Our first try was less than impressive. Thinking it wasn't harvested in time. I'd really like to hear suggestions also.

I haven't had an issue of an overly chewy center. I find their texture to be inbetween lobster tail or lump crab. I slice them 1/4" thick and start of real slow, low heat,  in a dry pan. Keep turning,  not frenetically, and when they have given up most of their juice I add aromatics and a fleck of butter. Most recently, I cooked Lions mane medallions as described and made a light beurre blanc sauce and gently warmed through some thinly sliced celery and cracked white pepper in the sauce.
