I tried to PC my dowels in a quart jar for 2 hours but the heat always dehydrate my dowels. I boil and hydrate over night the dowels and then PC. Is there any way to keep the dowels moist during PC?

If you pressure cook them in water, how could they dehydrate?

You could add wet sawdust. But yea how are they drying out so much? How long are you running them for?

PC 100 dowels in empty jars with lids (with Polyfill hole) for 2 hours. The dowels go in wet-brown and comes out dry.
Edit: just realized you're the youtuber I watch videos of for advice. Really cool videos man. The shiitake video is inspirational.

Don't pressure cook them dry, add water.2 hours is probably overkill. I've had good luck just microwaving them.

Lately ive been just sealing the dowels up in a jar of water for a few days or weeks till im ready to pc them. Then i just empty the jar rince and pc them. I found if i drained the dowels when still hot from the boiling process before pc ing them. They dried out. So i started leaving them in the water till cooled then draining them quickly and pc ing not leaving them to drain long.

I put them on the stove and boil them till they sink.(used some tea also) Then just bag them up in Ziploc sandwich baggies in appropriate amounts. Throw them all in microwave on high until the bags inflate. Let them cool and repeat several times. Usually I repeat a couple times the next day kind of fractional sterilizing. You could even do it several days in a row.So far had one bad batch so I had to contaminate that one bag. Be careful not to melt the bags.Just drop agar or seed in baggie and let colonize in bag. Disclaimer I've only done 10 bags this way.

Just another observation, I'm going to try adding some energy to the next dowels maybe some dextrose ? Just plain dowels with agar doesn't seem to have vigorous growth. Birdseed or grain has more energy for colonizing.

You should boil them for a bit then strain and pc. If you think they're drying out to much from the pc'ing, don't let them fully drain before jarring and sterilizing.
You don't really want any surface moisture on the dowels or extra water in the bottoms of your jars after the pc cycle, and just because they appear relatively dry after coming out of your cooker doesn't mean they may not be hydrated enough.
No need for messing with supplementing anything, and sawdust spawn is the best to inoculate your dowels with although small amounts of grain works to.
