San Pedro help

I got a baby San Pedro and this is its first winter, I was told to not water it for two months instead of the basic one month due to the fact it's cold and winter.
Also what chemical is in San Pedro that make people eat it?

Yes that's true, over watering(during winter especially) can cause serious root rot and can be potentially fatal for the plant, especially a young-ling. And the sought after psychoactive is mescaline, same phenethylamine in peyote. There are most likely a number of chemicals contained within measurable amounts in san pedro, but I'm not familiar with them.

A question, are you growing it under lights ATM or outdoors? the over watering factor depends on the temperatures that it's living in.

temps are critical in watering factors. If its indoors through winter I would say not to water at all!!! When spring arrives set it in direct sunlight, once the soil is at about 75F water it once and make sure it drains properly (cactus soil, perlite and sand) are very good for proper drainage. If it stays wet more than a day you will need to change the substrate/grow medium.. When you plan on cutting for use, do not water at all for atleast 90 days before cutting. It will still grow but it will remain thin, lowering the water content and intensifying the production of active chemicals, Im not sure if they are actually stronger due to stress(a defense mechanism)or lower water content, but its the way to harvest and lowers the chance of the wound getting infected after the cut...
