The incubator can cause the condensation. What is the temperature in the room? If it is above 60F you do not need an incubator.

Try to pour the plates when the agar is still liquid but not too hot. You should be able to touch the agar bottle without burning yourself. The colder the agar solution the less condensation.

Yes, let them grow a few more days and make a transfer.
Try to make it fast and don't open the dishes for too long. If it is your first transfer don't think too much which sector you want to transfer. Take a quick look and and transfer as fast as possible to a new dish. :goodluck:
