Whats the deal with putting wet verm or coir on top of cakes

Everyone that I see do this, never has any mushies growing out of the verm on top of the cake. They always grow on the sides or bottom. Is it just there for moisture reasons? And can you also use straight coir?

purely for moisture reasons. coir is notoriously hard to sterilise, so i wouldn't use it. never heard of someone who did before - maybe you could be the first?

Coir is great to use as a casing but to use them on cakes wouldn't be a good idea IMO because it looses moisture a whole lot faster than verm does. It would most certainly not keep up the moisture content that a water sucking cake would need.
