I completely disagree with that. It takes my pan cultures 3-5 days maximum (any longer then there's a problem Ime) to colonize a small manure substrate (1 inch depth, 1:2 ratio) a 1/8-1/4 inch casing applied and fruited right away has been the best results for almost everyone growing pans that I've talked to, including myself. They pin in 24-72 hours generally when there's more FAE than you can believe is even possible. In mono tubs I have the top holes unstuffed, and I have 2 extra holes (so basically 4 unstuffed top holes). The bottom holes are medium-light. MAX FAE is recommended. They literally never get enough. Pans are like way faster than cubes IME. Letting them consolidate has done nothing but produce what OPs substrate did IME. The overlay is real, and it comes fuckin quick, so induce pinning ASAP.
I mean his results are impressive, but consolidation just gives it much more overlay than you actually want. They're ready to go so quickly ya know?

UTSF for a cloning tek and agar tek. Follow it to a T. You got this. Clones can grow faster. Keep FAE optimal without losing moisture. Once they go dry they wont grow as fruitful.

Today I shot new photos here they are:

Consolidation 1-3 days with fully colonized then add casing layer and immediately put my grow room (not used any monotub or shotgun) they are also fluffy during consolidation in incubator. Btw. I have a grow room automated with FAE by carbonfiltered fan that fans inside the growroom. A heater and coolmist machine misting all time, when humidity and heat reaches limit, fan system starts and fanning till the humity and heat lower. Then stops.

what happens if u reach ur target humidity but ur temp is still too low? are they on the same stat?

That's not possible I did get a log hourly and checking it often. Humidity around: 80% - fan starts at 90% Temp is around: 78f - fan starts at 80f
Fan stops at: 77f and 80%

Nice. Was just curious.
Fogger discs create some ambient heat while providing enough humidity if ur cool mist ever breaks.
As far as the caps, I dunno. FWIW a couple tines this summer I cased Pan cambo'so a lot thicker to try and combat any kind of overlay, and the caps resembled yours when I did that. If they initiate from substrate by the time the caps start really growing, the depth of the casing can make them appear short like that.

Do you think those mushrooms stays dwarf? Or loose potency? How could I know when the harvest time comes?

Not sure, I'm running with the assumption that like cubes, potency can be affected on a dry weight basis by the amount of spore production going on, however much that might be.
It will b annoying to harvest and The stems will be annoying to clean, that's for sure. No way to prevent it at this point, but it's good u got fruits!
Harvest right before cap looks like it is about to flatten out.
