Fuckin love cheese.
However im looking for new ones. I want something with a medium to strong taste thats somewhat aged... yet still has a soft to medium texture.
Curious what your favs are.

You should look into making cheese if you're a fan. It really is quite simple, and then you can make it to your tastes.
Some easy beginners milk fermenting projects are yogurt, farmers cheese, drawing a blank on others. Yogurt is literally just heating milk slightly and adding a bit of store-bought yogurt as the starter culture.

Made it before. Only tried farmer's cheese though, none of those cheeses that take like a month to ferment. That's so funny you mentioned that, I was actually looking at cheese-making videos a couple weeks ago and ordered some liquid rennet for specifically that purpose.
Figure I'll start out first trying to make mozzarella, as that's an easy beginner's cheese to make.

nah you need the aging... its not worth it.
aging give it more chemicals. aka "cheese sweats" which have the tiniest bit of opioids in them which is all i get these days :P

Yeah honestly, making your own cheese is not very cost-effective... costs $8 to make a small plate of cheese, and you could have bought that amount for the same price. It's not like homemade cheese tastes THAT much better than store-bought too. That is, as long as you're buying good cheese. I refuse to buy shitty cheese, I buy from places like Whole Foods.
I can't stand it when people say they love cheese but have only had those shitty American pasteurized cheeses. I'll never forget the time I asked my roommate to go buy some cheese since I was making carpaccio, she came back with Kraft American cheese slices. I was like, what the fuck, I couldn't even use them.

Does anyone else get "cheese sweats"
Ive heard it only effects a few a people. It only happens to me when I eat aged cheese. Ive heard its caused by tyramine which is apparently kinda like epinephrine.

Goat cheese is definitely one of my favorites too. There's this one company that mixes dry sweetened cranberries with their goat cheese, and I love using that for salads. It's expensive though, a 4oz stick is like $5 and an 8oz stick is $9. That's basically 4 servings worth.

I've always wanted to look that up but never did. Definitely have had cheese sweats before, they feel so gross.

My current favorite is Cambozola. It's like a cross between blue and brie. Goes really well with charcuterie and/or nice fruit preserves.

Yeah I think it is a typical thick cracker cheese, I can't find the specifics on the kind of cheese but I saw it compared to a rich/ earthy mild cheddar.
It goes good with everything though On crackers by itself or with meat/ other toppings, in every dish I have tried, its even delicious on its own.

Yeah $5-$10 is pretty standard for a small block of good quality cheese. Cheese and seafood is probably where I spend a bulk of my grocery money on. Fun fact: Cheese is the most commonly shoplifted food item in the USA, which makes sense really.

I thought about it for the sheer fact that I love cheese and will try every type of cheese I can. Until I read that you have to properly crush all the maggots while eating the cheese or else they can chew through your intestinal lining. Also its not recommended to eat the bigger maggots.

Cheese is awesome. I'm the cheese buyer at the market I work at. I order over 80 types from all over the world. Big fan of Spanish cheeses. Especially sheep's milk cheese. Love French brie. Lots of great cheese comes out of cali. Humboldt fog is great. Point Reyes blue cheese is amazing. England got some great blues as well. Been eating the fuck out of some traditional Armenian string cheese lately. So many cheeses, so little time.

A lot of cheeses are weird on their own. The majority of people I know hate blue cheese but pop a baked date stuffed with blue cheese and wrapped in prosciutto in their mouth and they orgasm. Man all this cheese talk is making me hungry.

I'm not really a huge cheese guy, yeah it tastes good on certain things, but I have issues with milk products, so don't really mess with cheese that much, maybe a few times a month. When I used to drink wine in the past I would eat cheese with it sometimes, it was a nice snack, cheese, crackers, and red wine.
I like the taste of parm with pasta dishes, swiss, gouda, mozz, lots of good goat cheeses out there like some of the soft ones are good. Some of the goat milk ones taste a bit like a goats udder dragged through mud if you ask me, and are not so great. Sharp cheeses are good, the sharper the better I guess, I had some really good cheddar at some point in the past, it was white I think, was really sharp and good too.
Cheese and apples pair well together, so does a cheese like gouda, with some apples and ham/prosciutto.
I love cheese, but getting horrible gas pains from it just isn't worth it, someone told me to buy a lactose pill, why would I want to rely on a pill to eat something.
