I have an old crab Apple tree out back. Can I just plug a live tree? Or should I limb it and rent a wood chipper?

A live tree will resist nearly any type of mycelium. And nothing will happen.
Either chop it down and leave it for years, or chip and dry it out.

Thats the extent of my wood chipping knowledge.

All you have to do is girdle the tree ,wait a couple weeks and plug it. I don't know your environment but with moisture you should get some mushrooms Probably need to remove the smaller limbs because they will break off and be a hazard.

Just a heads up. Fruit tree wood is not the best to plug. Especially trees that have paper bark.

There are two reasons for this:

-Fruit wood is pretty darn hard and the mycelium can have a hard time with it.
-The paper bark does not provide much protection and it isn't ideal for the
  mycelium to run.

However it can be done. I have fruited on cherry and apple. It just isn't ideal. You will have better success with other hard woods.

I agree fruit wood is very dense , hard. You think if the tree is standing bark may hold up better?

Thick bark that doesn't peel off it what you want. Like Maple, Oak, Hickory and so on.
