Does it matter which tree you are getting the sawdust from?

I have future plans of growing oysters on a large scale and currently am thinking about what I can use as the cheapest substrate.  There are many olive trees in the area where I'm planning to grow, and they prune them every year so it would really lower costs to shred them and use the sawdust as substrate.

So, does it matter which kind of tree it is? Would olive trees work fine? .)

Maybe?  Only one way to find out.  Might be better if they shred and dry them first.  Most desert plants have a lot of protective chemicals.  But oysters are very aggressive. ..

I've found a passage in Growing Gourmet and Medicinal Mushrooms where Stamets mentions that the faster the wood decomposes, the faster the substrate will be ready to fruit.
