First grow, questions about substrate color and pinning

Hey there - I'm very new so your patience is appreciated.

I'm growing GTs using PFtek. Today is 3 weeks since innoc, my jars are all almost fully colonized.

2 things:

First - in one jar, the last little patch of substrate (verm/BRF) is presenting as slightly green-tinged, compared to the deep brown of the rest. The surrounding mycelium looks just like the rest of the jars - white, healthy, thready, thick. Cause for concern?

Second - almost 50% of my jars are pinning already, or what I'm guessing is pinning - stems with little dark colored nubs on top. some of these alleged pins have pretty long stems, like half as long as the jars themselves (pint sized jars). I guess my question is - should they continue to inoculate until fully colonized or should I be dunking/rolling/moving to terriarium? My instincts say let them fully colonize, but I have no experience, haha!
