QA Optimal Manure Substrate + (Hydrated Lime?)

Greetings! A first-time grower here I have 12 Galindoi ATL #7's at 28 days post-syringe inoculation.

I have three lasagna pans of 7' depth which perfectly fill my soon-to-be monotub.
These jars are on rye grains (easily found at most Whole Foods, fyi) so I plan to case them. Monotub prep is planned for 8 days from today.
Between the substrate and casing, the materials I have are: deodorized manure, earthworm castings, Nature's Care organic potting mix (sphagnum peat moss, coir, yucca, and a bit of nitrogen and phosphate), and verm.
I plan to purchase gypsum and hydrated lime.
I plan to mix all these at roughly half manure:others with sterilization in PC'd oven bags.
Then mix it with the myc. grains and case it with a small layer of the same mix above except without the manure.
Would you agree these ingredients will serve well? Also, is hydrated lime a necessity if using manure? Will oven bags most likely melt if they're touching the side of the PC?

hyrdated lime is a big no-no. it raises pH if you add enough, which will inhibit the mycelium growth.

If I were to add spent coffee grounds to my substrate, and oven-bag it at a squeeze-test water level and pasteurize, would it be sterile enough? By pasteurizing I'm referring to submerging the bags in hot water to an internal temperature of 135F for 90 minutes.
I have quite a bit of substrate.
