Condensation and weird smell after PC'ing batch of PF TEK jars

Just PC'd six jars in my brand new pressure cooker, plus two pasty plates, a jar of cotton swabs, and a needle. Stacked two jar layers, one wash cloth, and a layer of tinfoil. Filled the water up to just under the layer of tinfoil. PC'd that shit 90 minutes then let her sit overnight. When I opened it up, the PC smelled funky. Hard to describe, but it smelled just like my last batch of PF TEK jars, NONE of which had growth. When I looked at the jars, there was some condensation in there. But perhaps the most alarming thing was that the water was yelllow brown. What am I doing wrong? Should I use or throw out this batch?

All PF jars will smell relatively the same during/after cooking. I'm about 99% sure you're overthinking this.

I'm just worried cause last time I noc'ed up 4 jars that smelled exactly like this, no growth occurred after like 2 weeks so I thought they were bacterial.

maybe you arent wrapping the jars up tight enough with foil and some water is getting in, ive been getting serious bacterial problems myself.. I think it may be my pot lids( dont have a PC)
what I am going to do is wait about 5,6 days and see if there is any weird growth in my jars and then knock them up, will help see if its my preparation or my inoculation technique
also, if they smell like rotten..sour apples...its bacterial but that usually occurs later and not right after sterilizing

you only have to lay the foil over the top. it doesn't need to be tight by any means.

wouldnt that let condensation in and ruin the dry verm layer during steaming?

no because the foil is in the way. and the dry verm barrier gets wet during sterilization because the steam has to go everywhere anyway. foil comes off after so it will dry. It's damn hard to fuck up a jars moisture content unless you put it in there upside down or side ways.

Do not worry, just put 2 tablespoons of white vinegar in the PC the next time to avoid water stains on the jars. Furthermore, treatment of cakes BRF for 90 minutes at 15 psi is useless. They are boiled for 90 minutes without any pressure.

90m at 15psi isn't useless it's better 90m just steaming is sufficient.
2 tablespoons depends on how much water you put in your PC. My PC takes more water than a small one so I use two tablespoons. if you have a very small PC you probably just need a splash.

You've added too much water and water has gotten into your jars as it boils. If your pressure cooker doesn't let any steam off during the pressure cooking you can get away with just adding a glass of water to cover the bottom. If you have a trivet be sure to use that as well. If your pressure cooker does let out steam during the pressure cook, you need to add in a known amount of water to the empty pot and run for 90 mins empty just to figure out how much water your pressure cooker loses during the cook. After you figure out how much water your pressure cooker loses over 90 mins then you can just add a bit more than this amount to sterilize. In any case filling the pressure cooker jar height water is how you make a stew, not how you steam.

There was just about quarter to half of an inch of water left after PC'ing. Last time I accidentally let it run out of water, it melted all the rubber on my jar lids, and fucked up the metal! So I dont want to risk it…
