shiitake blocks pinning at 6 weeks

im on my first run of shiitakes. im using a sawdust/bran mix, 5 lb blocks. i few of my blocks have started pinning. im unsure how to proceed... does this pinning mean the block is ready for birthing? seems like a short incubation time. should i cold shock blocks once they show signs of pinning?

Mycelium needs to turn brown. Then your ready to fruit.

Temperature to high. Depending on the strain the ripening phase should be 15 to 19C. If you don't know err on the lower side.

ok so theres a problem... its higher than that. are the high temperatures cauing pinsets early?

The browning looks fairly good on that one thats shown pinning. You could cold shock smack and put into your grow chamber now. Leave the bag on for 2-3 days or until the pins are pushing on the bag. The rest need another 1-2 weeks at least for more browning.  Its possible you overspawned that one bag so it colonized faster and was browned faster. Watch my video on growing shiitake and it goes over how bags should look and how to shock and birth.

IME in vitro pinning is provoked by a temp switch. If it pins really early, not long after inoculation, it is usually a sign that you got some kind of contamination in your block. The mycelium starts forming mush as a defense, that's my theory at least.

ive seen your videos grower, theyve helped me alot. the reason some bags are browning and some arent is because right now i can only make three bags a day, so the bags at the end of the run are younger. need to figure out how to make more bags per day.

what i was unsure of is if pinning is a sign the block is ready for fruiting not time or browning. but it seems the consensus is browning before pinning. i have one block that is quite white and 5 weeks old that has really started pinning overnight.

usually for me it happens when they're moved after theyre fully colonized or, most likely your temps are swinging down into the 60s at night.  it's best if you can maintain a constant temperature, preferably 70F.
