I believe so, what color is the latex when you damage (cut) the gills?

Odor? Does the latex change any colors? Does it taste acrid?

Its white, you can see it in the photo, but maybe it changes colors. Candy caps have more a milky/watery non-white latex.

I don't really see any latex in that picture, it just looks like crushed gill material. 
But yes, skim milk would be the color and consistency your looking for. If its thick white, like Elmers Glue, or yellowish we have something else.

I think we need confirmation of the actual latex color from the OP if they still have access to that specimen or the one still standing, at least to be assured on that point. I'd be interested in its odor as well.

latex runny in the older ones, white in the younger ones. not changing color. not acrid.
smelled like spliff. because my fingers did.

If the latex is not changing to yellow and it doesn't taste acrid then my guess is wrong. The white latex and lack of maple syrup odor also suggests against candy caps.

They are probably Lactarius rufulus. The odor is not nearly as pronounced in that species.

yeah i guess if you stick your nose in the bag you could say they are "sort of sweet smelling"? definitely not bad tasting.

Fry some up in a pan. You don't have to eat them but my understanding is they should produce a maple syrup sort of smell if they're candy caps. I have also seen it stated the odor is supposed to intensify as they're dried.

That species should smell a little even when dried, not quite as much as L. rubidus though. At least when I find them they do.
