Here is my PurpleX4 soup today
-------------------- Don't worry about me, I've got all that I need. And I'm singing my song to the sky You know how it feels, With the breeze of the sun in your eyes. Not minding that time's passing by I've got all and more, My smile, just as before. Is all that I carry with me I talk to myself, I need nobody else. I'm lost and I'm mine, yes I'm free

This is one of the easiest recipes in the sense that it only uses 3 ingredients--oxtails, water, and salt. But it's so hearty and rich, since the bone marrow inside the oxtails seeps out into the soup and is so flavorful.
It's Korean oxtail soup, also known as kkori gomtang. The process takes about 2 days, but it's not that much work.
Basically you first soak the oxtails in cold water for 1-2 hours to drain all the blood out of it.
Then boil 3-4lbs of oxtails in a huge pot of water, for about 20 minutes, then simmer for several hours. You want to check up on the pot every now and then to make sure the water doesn't dry up, and keep adding water if it gets too low. You will also want to skim off the top of the broth and get all those foamy bubbles out continuously during this process. Do not add salt until the very end, because as the water reduces, it changes how concentrated the salt becomes.
After 3 or 4 hours, let the pot and soup cool completely, then store overnight in the fridge. The next day you will find that your soup has gelatinized, like a solid piece of jello. Don't worry, this is due to the high amounts of collagen that is in the soup. Collagen is very healthy for you and good for your skin.
But you will also notice there is a layer of fat on the top layer of the soup. You need to skim this fat off and discard it, because otherwise your soup will be too greasy. This is supposed to be rich and hearty but light soup, not heavy and fatty. Then you simmer it one more time, and your broth is ready.
You may now add salt, green onions, whatever you like in your dish. You can add other condiments at the end like chopped cilantro or pepper, but that is completely up to your tastes after the 3 primary ingredients.

Soup is one of those dishes that's good to cook when you have any leftover meats or tons of vegetables that need to be put to good use.
I'm the type of person that uses EVERY part of the vegetable and animal. Broccoli stems, carrot shavings, carrot ends, the ends of the asparagus that are too tough for consumption... If I'm not saving it to put in a veggie smoothie, I use it all to put it in a soup.
Same with animal parts. Every Thanksgiving, I ask for the leftover bones from the turkey or ham, and I use that to make soup stock out of. Any time you eat an animal with bones, you should always use those bones to make your stock.
I looooove beef stew!!! Probably one of my favorite soups, right up there with New England clam chowder too. Every Thanksgiving my aunt makes a pumpkin soup that is absolutely divine too.

I'm not crazy about tomato vegetable soup, so I can't help you there. Usually when I have a bunch of tomatoes I do a reduction with some garlic, onions, salt, and a dash of hot sauce until it reduces into pasta sauce.
Interestingly though tomato soup was the first food that I ever learned to cook. I wanted to take a cooking class when I was 5 years old so my aunt took me, and we learned to make a tomato and basil soup. Was delicious.

It's, surprisingly, incredibly easy. I'll find/think up a recipe and post it here later today. I've made it a few times. Love me some miso.

Does anybody know how to make a basic chicken noodle soup without using canned or pre-made broth?
Is it possible for it to taste just like chicken noodle using only chicken, water, and salt if you spend at least a couple hours making a reduction out of it?

You just straight boil the bones for a few hours or what?

Thus, stories are small things indeed in the scheme of the universe, but it is hard not to love best what is our ownβhard for me, at least."

Yeah, that's pretty much it. Throw all the bones from a turkey or ham or a chicken in a huge stock pot with a bunch of water, make it boil on high, and then turn it to medium or medium-low and let it simmer for around 3 hours.
Just make sure to check up on the bowl every 30 minutes, if it starts getting too low in water, you'll have to add more water. You want the liquid to reduce some so it turns into a thick white stock, but if all the liquid evaporates it'll ruin your stock.
So, make sure you start out the pot with a lot of water, because it'll evaporate and reduce a lot over time.
Don't add salt until the very end, because you won't know how much the broth reduces by. If you salt before and the liquid decreases, it makes it more salty.

So I did that this Thanksgiving too, and after a few hours of reducing, your soup stock should look white and creamy like this

If you like ramen recipes check these guys out on YouTube called Brother Green Eats. They have a video called "5 creative cup noodle recipes," and they also have another one called "How to survive on less than $30 a week of groceries." And the guys actually know what they're doing, and are really creative with the things they make.

Koods has a good recipe. I start with the base first, boil the carcass and skin with the meat stripped off for 8 hrs or however long you want to do with herbs and spices. I then strain the soup and add celery, carrots, onions and boil that for an hour or two until sufficiently cooked. Then add the meat and noodles of choice, I go with egg noodles, and cook until the noodles are al dente.

Crystal G said: Collagen is very healthy for you and good for your skin.
I don't know where this comes from but I do not believe this to have any scientific basis. My friend takes collagen supplements and I think it's a total waste of money. Collagen is a protein and like all proteins it only gets absorbed by the body after it has been hydrolyzed into mostly single amino acids at which point it looks identical to any other protein you could possibly eat. Even so, collagen is predominantly in an irreversibly crosslinked form and the individual amino acids can not be liberated and it simply passes into your shit.
I'm guessing the idea is that it stimulates collagen production in your skin and makes you more youthful looking which is incorrect. Collagen, like other extracellular proteins, are for the most part permanent fixtures of the body and will degrade over time due to the oxidative power of the sun's UV radiation among other things and our body's ability to replace collagen is limited. Additionally, the cells that make up your skin are only as healthy as the stem cells that give rise to them and they will accumulate mutations and senesce as time goes on.

I can't scientifically prove that it's good for you, but that's just what some cultures say about the soup being good for your skin. People also say that about kim chi and tofu, and I'm sure there is some truth to it, whether it's provable or not is another question entirely.
I personally don't believe that supplements are nearly as effective or healthy as getting your nutrients straight from a food source either.
