Fall/ Winter soup recipe sharing thread! 2

What are your favorite soup recipes? The time of year is here and I have been making a lot of soup.
Just simple veggie soup mainly that I add miso to but tonight I made a veggie/ sausage soup which has:
Squash Broccoli onions Sausage Garlic Ginger And seasonings including: salt, pepper, habenero, paprika, and veggie broth seasoning.
I started with the onions by melting some oil in my soup pot. I then caramelized the chopped onion while adding some seasonings.
Add minced garlic as the onion finishes then cook that for a few minutes before adding the water. Once you have some boiling water chop up/ add the veggies.
As the veggies boil I add more seasonings and occasionally give it a taste to see what else it could use. Pretty simple to make but tasty!
This sausage version won't even need miso methinks! I used apple chicken and mango jalapeno sausage for extra flavor.

It's basically Olive Garden's soup which I fell in love with and eat it all the time now..
1 pound spicy italian sausage links (or if the store has it, you can just get the meat since you'll be taking it out of the casings anyways) 4 slices thick bacon 2 very large russet potatoes cubed 4 cups beef broth +1-2 cups water 1 pint heavy whipping cream 1 large onion diced 2-3 cloves garlic minced ~4 cups chopped kale (remove the stems first)
Roughly chop bacon and brown/render the fat down, add in sausage meat, brown, add in onion, brown, add in garlic and cook for ~1 min, pour in broth, add potatoes and bring to a boil. Once the potatoes are done, add in the whipping cream and bring it back up to heat then turn it off, then toss in the kale and stir it around for about a minute just to slightly wilt it.
I could go through a double recipe of this stuff all by myself and still not be tired of eating it.

Great fall thread!!
My absolute suggestion and all-time favorite from yours truly:\
Dish name: Pumpkin black-bean soup
Directions:
HEAT oil in large saucepan over medium heat. Add white and light green parts of green onions, bell pepper and garlic; cook, stirring occasionally, for 4 to 5 minutes or until soft. Stir in cumin and thyme; cook, stirring occasionally, for 1 minute. Add beans, pumpkin, tomatoes and juice, broth and water; bring to a boil. Reduce heat to low; cook for 10 minutes. Stir in salt and cayenne pepper. Top each serving with dark green onion tops.
Ingredients:
1 tablespoon olive oil 5 green onions (white and light green parts), thinly sliced (slice dark parts and set aside for later) 1 red bell pepper, chopped 3 cloves garlic, chopped 1 1/2 teaspoons ground cumin 1/2 teaspoon dried thyme 2 cans (15 oz. each) black beans, rinsed and drained 1 can (15 oz.) 100% Pure Pumpkin 1 can (14.5 oz.) no-salt added diced tomatoes, undrained 1 can (14 fl. oz.) vegetable broth 1/2 cup water 1/2 teaspoon salt or more to taste 1/8 teaspoon cayenne pepper or more to taste

Thanks for the contribution! That sounds delicious I love pumpkins and beans so I will have to give it a try.

I will try one of these soup recipes for sure . I found an exceptional chicken burger recipe that would pair well with any of those soups.
* 6 tablespoons butter, softened * 1/2lb white mushrooms or maybe a gourmet Mushie , finely chopped * Salt and pepper,Garlic freshly minced * Butter lettuce,Arugula or Iceberg * 3/4 pound ground chicken * 6-10 slices bacon, cut in half crosswise * 2 onions, thinly sliced vadallia,pearl around a cup,grilled etc * 1 tomato thin sliced * 1-2 stalks of celery * 1-2 small carrots(optional) * 1 small red and one small green bell pepper(optional) * 1 cup chicken broth * 1 cup red wine * 1 tablespoon tomato paste * 4 kaiser rolls, split * Fine Colby Jack cheese and Mozzarella * One half of a thinly sliced sweet and sour dill pickle * Small can of Black olives(optional) * Either A-1 or sweet BBQ sauce with honey added to thicken Directions 1. In a large skillet, melt 3 tablespoons butter over medium-high heat. Add the mushrooms and cook until softened, 8 to 10 minutes; season with salt and pepper. Transfer to a medium bowl; let cool slightly. Add the ground chicken, 3/4 teaspoon salt and 1/4 teaspoon pepper; shape into 4 patties. 2. In a large skillet, cook the bacon over medium heat until crisp. Drain, reserving 2 tablespoons of bacon fat in the skillet. Add the onions and cook over medium heat, stirring occasionally, until softened and browned, about 10 minutes. 3. In a small saucepan, bring the chicken broth, red wine and tomato paste to a boil and cook until reduced to about 1/2 cup, about 8 minutes. 4. Preheat the broiler. In a large skillet, melt 1 tablespoon butter over medium heat. Add the patties and cook, turning once, for 12 minutes. Meanwhile, spread the remaining 2 tablespoons butter on the rolls and broil until golden. Place a patty on each roll bottom; top with onions, wine sauce, bacon and a roll top.Add cheese when hot out of skillet ,add grilled onion,pickle,BBQ sauce etc.

I have another, lets keep this thread aliveeee!
I call this one PurpleX4 becouse I used 4 different purple veggies, here it is:
Purple Potatoes Purple Sweet Potatoes Purple Carrots Purple Kale Broccoli Corn Garlic Onions Squash (I used dellicata but any will do I bet) Sausage (optional, any meat/ proteins could substitute)
I prefer organic stuff when possible if its not crazy expensive but its not necessary, at least half of the stuff I used was and most was pretty cheap!
That is the bulk of it I think and here are the herbs/ seasonings I used:
salt black pepper paprika cayenne habenero powder Rosemary Sage? (possibly another herb) turmeric Mint (lime? mint I think) Veggie broth seasoning
So start by caramelizing the onions. Melt some oil in the soup pot, I use coconut oil. Once its hot add the diced/ grated onion and simmer carefully at a low-med heat. You want it hot enough to cook nicely but not burn, helps to use a lot of oil once the onions are looking golden I add the minced garlic. Let the mixture cook a little longer.
While the garlic cooks I start adding herbs/ spices starting with salt/ pepper but a bit of everything doesn't hurt 
Once the garlic is looking ready add a nice amount of water. If you can use purified water but tap will do if necessary. As the water heats up ready the veggies.
I started with the squash, 2 small delicata's that I chopped into 1/8ths and scooped the innards out. Then I chopped up the rest and added it.
While the squash softened I started the potatoes but I got distracted and let the squash go for awhile first. Probably smart to give it 30min at least.
Next I added the potatoes, I chopped them up into small-mid sized chunks. After adding them I did the broccoli followed by the carrots and kale.
Once I had all the veggies under way I chopped up 3 small sausage's, chicken apple. I chopped em into smallish pieces to add as much flavor as possible.
As everything stewed I started boiling some water to add a can and bag of frozen corn which I cooked for 20-30 min until it tasted ready then into the pot it went.
As things progressed I would occasionally taste it and add some more herbs/ spices. I used a ton of turmeric which is good stuff. Last I added 4 small mint leaves.
After everything had been soaking for awhile I decided it was ready. The consistency is near chowder due to the potatoes, it tastes incredible!
 That is the huge pot of it after cooling down for a little so I could get a pic not obscured by steam Notice the beautiful oily top 
 Small bowl of the finished product, one of the tastiest soups I have ever had. Incredibly heart/ medicinal. I drank4-5 small bowls and feel rejuvenated!
I know its a long complexish recipe but if you can get the ingredients it will be worth it! They don't have to be purple but honestly purple potatoes are the tastiest IMO and probably more healthy then typical potatoes. Not sure about the carrots or kale but I thought it was cool The all went great together though and this soup should last me a few days!
Soup is the way to go, I spent like 1 or 2 cheap meals worth of $ (20~$) and have easily 5+ hearty meals of delicious soup now

I love soup. Love this thread of soupy ideas. I have a slow cooker/crock pot which makes everything taste good. Throw in: Water Tinned tomatoes Tomato puree Chick peas Onion Garlic Celery Potatoes A cheap lamb bone if you like meat, put it in the over on hot for a short time to melt some of the fat out. Coconut oil Salt Pepper Tumeric Fresh chilli Corriander Cumin

Thanks for reminding me I have a crock pot and can make soup in it not just ganja butter 
Also can't pressure cookers be used for soup? I have a giant one, I remember reading about cooking with em and was surprised.

Anyone have a good pot roast recipe? That is what I want to try next I think... Possibly a pressure cooker roast as it apparently works great!

I am interested in pretty much any soup anyone has to share I tend to make stuff from scratch so I may not try most but they can be inspiring at least.

My girlfriend and I made some tasty soup (pretty similar to the soup in the OP) a few days ago and I just finished off the last of the leftovers for lunch today. We tried to go to the bakery in town but it was closing as we got there so we decided to make our own with what we had in the house. It went something like this (I just cut and prepped everything while she put it all together so I am not 100% sure ha).
1 1/2 cans of chicken broth Some water 3/4 lb of pork sausage 1 1/2 cups of lentils A couple large carrots sliced 1/2 an onion A few cloves of garlic 1 Tomatoe 1 Zucchini sliced Fresh basil Thyme Cumin Probably some other spices I didn't see her put in Salt and Pepper *We used up our potatoes the day before and forgot, but we would have added those to make it a little more hearty.
Cooked onions for a bit and mixed in the garlic as well, then added broth and water and seasonings. Once boiling we added the veggies and lentils and let simmer for a good while. It had so much flavor it was amazing, not sure why we ever buy canned soup.
Definitely going to start using the crockpot more often for soups during our first wet winter in the PNW so I will being trying some of these out!

Dont have the fucking patience to cook soup. I do stews, mostly beef stew style, on occasion. I also learned how to make a spicy crab chowder from my mom. You just do it like new England clam chowder with traditional crab spices, old bay, and a little red pepper.
Paneara bread has a seasonal soup tho, I think it's called Autumn harvest or some shit. It's a creamy squash soup sprinkled with sunflower seeds and it's pretty dank. Do try it if you get the chance.

I like to eat my soup as it cooks, partly as an appetizer and also to gauge the flavor.
Been thinking about some stews as well though, apparently pressure cooker soups can be made super quick too!
