When people take otherwise obvious jokes or cracks ( ) seriously and become defensive (or offensive?), do you think this could be a sort of revelation of their insecurities?
Maybe it's situational, doesn't matter.
I'm asking this in a rhetorical way, as a reminder that maybe it's OK to lighten up a bit.

It depends, if your joke is basically pointing at someone and calling them a dumb piece of shit, why not take it seriously?
Too much humor waters you down anyways, when "nothing is sacred" that's a reflection of a lack of emotional depth and subtlety. Pulling a gag at someone's wedding or funeral is inappropriate, distracting from something important and real, with bullshit.

The worst part about this is that most people won't tell you to your face if they were offended. My sense of humor is either dark or dry/sarcastic (sometimes both). This tends to put off a lot people so I end up censoring myself.

I think that in many cases this is exactly how it is. However, I would distinguish between cases where one person is simply poking a joke at another, and cases where one person insults another person maliciously and angrily, but attempts to masquerade it as "just a joke" so that the other person can't defend their-self without appearing butthurt or insecure. The latter case is an example of the "joker" being passive-aggressive and is kind of a bitch way to attack someone.
