So, this morning, I threw out my existing perlite, drilled 1\4" holes in an approximately 2" x2" grid, filled my new chamber with about 3 1\2" damp perlite, and put my three cakes back in. While all this was going on I soaked my cakes in water to rehydrate them. I misted the chamber and closed it back up. Its currently sitting on a wire closet shelf so it can get 360 air. Hopefully things will work out or I'll have to start cruising parking lots at jam band shows to see if I can score something.

Can I fan the closet often? I can't grow these out in the open. I have kids and a very conservative wife. I can probably leave the door open at night but that's not a guarantee. I couldn't roll. The two year old was getting restless.

In general, you're fine to grow in a closet. Sure, the air might be deader in there, but you'll be misting and fanning to help that out, right? It's not ideal but for the small scale science fair level experiment you're doing, don't sweat it.
That said, it's not a bad idea to keep the air moving in the surrounding room and/or in the closet itself. Run a small electric fan in the vicinity of the grow. Do not point the fan directly at the fruiting chamber. Experiment with fan placement and speed. Your goal is to encourage continual evaporation of moisture from the cakes, without actually drying them out too much. Do your research in this forum to find out what cake look like when they are stressed from being too dry. If you can mist your cakes frequently (several times per day) then you want to give them a bit more fresh air, so put the fan closer and/or higher speed. If you can't, then put the fan further away or don't use a fan at all.
As I mentioned early in the thread, your main problem was that your cakes were suffocating because you were using a monotub-style fruiting chamber with a shotgun-style growing technique. If you've switched to a shotgun chamber, then you've made the biggest single improvement that you possibly could. The most important thing to do from here on out is to mist and fan as much as you can. You should see your cakes look healthier already - that fuzz in your original pictures was evidence of lack of fresh air.

I have a few pins when I checked on them this morning. I was as excited to see pins as I was mycelium. I'm able to mist and fan twice a day and have been leaving the closet door open at night. I appreciate all the help from you guys.

A small fan, on a low setting, across the room, not pointed at the grow, is not going to fuck anything up.
