Is the milky area around the mycelium a contaminant? ..... I wasn't sure because not all my dishes have it.

Looks like a lot of bacteria. You may need to use the sandwich technique or a hot pour for bacteria. Searching both should give you some options.

How can you tell? To me they look the same I just knocked some pasty plates and I'm asking so I can tell when mine start showing
