Condensation inside grain jars

I'm wondering if anyone knows what causes condensation inside the grain jars? Most of them are in the closet with t5 on the wall. The closet door stays open and the room is heated to around 76 degrees

The Jaws theme to call and I was just fine with the conversation but it still bugs me for some reason. I'm using PopCorn by the way, and before you guys all bash popcorn kernels, ice heard it all, but I've been using it for years and I love it

If your grain is colonizing, then condensation around the Myc isn't uncommon.  You're going o have a little no matter what.  It's when you don't have Myc and have condensation that you should be worried.  This likely means your jar is too wet and will probably not make it through colonization. 

Condensation is caused by the jar being warmer inside than the surrounding air on the outside.  Thermogenesis from mycelium usually causes condensation as Myc is generally about 5F or so warmer than the air around it at all times.  When there is no Myc, the inside can be too wet or there could be sudden temperature swings from warm to cold in the room they are being housed in.

That makes sense, the condensation doesn't show up until they're pretty far into colonization
