55gal steamer vs pastuerizer?

Hey guys, I'm in the process of gathering all the equipment I need to start my gourmet shroom business. Just looking for a new house with some land so I can get construction started. One of the last things I need is a steamer/sterilizer or pastuerizer.
Wondering what method you guys prefer and what kind of setup you currently use? I'm going to build something from a 55gal drum. Right now I do small scale grows and use my pressure canner to pasteurize my sub. Not sure whether to build a vertical pastuerizer or something like RR's horizontal steamer.

Have you seen my single drum steamers? Much simpler and fit more sub than even a double barrel steamer. 40-48 7-5lb bags.
For starters i would recomend straw and hot water bath as its more forgiving. Later when you get a big flowhood and good sealer move to bags. Best way to do the pasteurizer drum is use your hot water heater if it goes upto 165F then use that to fill your open top drum with a lid and the straw in laundry sacks and a drain valve at the bottom. If your hot water heater cant handle it have an elevated hot water drum with a heating element to warm it up.

I purchased a laminar flow cabinet from a Hard Drive data recovery company that was shutting down, so already got that covered. Impulse sealer will be my next investment. I'm hoping to move straight to bags. I'm guessing your method is soak material, bag it, then bags in the drum for sterilization?
I had a look through your posts but couldn't find your single drum steamer, any chance you could shoot us a link?

I hydrate by weight. Single drum steamer I dont do the little elbow anymore at the bottom, Ive since installed a sight gauge to see the level. I also now use the float on a buzzer alarm.

Awesome stuff man! reckon I'll go with something like that. Couple of questions..
How does the plastic drum hold up to the heat as opposed to the steel drums? Does your steamer build up any internal pressure whilst running? And most importantly, have you had any issues with contams since swapping from pasteurizing to steaming?

The drum handles the heat fine. The one drawback of plastic is you need to tap all the holes for npt threads. Im actuallty about to replace the plastic with a stainless steel one, hope to sell them though an online vendor. NO there is no pressure. I have two holes in the lid for venting. And yes contams are much more likely with sterilized substrate but you get much bigger flushes. Thats why i always recommend starting with pasteruization.

If you get a chance gr0wer, could you link me the tap set you use on the plastic drum? I am almost done getting supplies but need to tap the holes and purchase the element protector.

You can find those taps and the handles at lowes or home depot. Once grower gets back to you on the pipe size you shouldn't have an issue finding a tap.
Remember when using a tap go slow. Don't force it and work it back and fourth to cut the threads. If you go too fast and try to force it you can run the risk of stripping the new threads.
