How crunchy should my mushrooms be?

Should they be straight up so dry they crumble. Or should they still have some give

No give.
They should be so dry they're hard not to crumble into powder if pushed on

cracker dry, when you bend them they should crack. If not, when you put them in a bag or seal them they will get mushy

I have some that have been drying for 1 1/2 days so far and I can squeeze the sides of the mushrooms together. They are really really slim like angel hair pasta.

When my cakes start to feel spongy (when I squeeze them) its usually an indicator of spent sub. Considering this is your second dunk I'm going to assume that there's something else going on here...
How long did you dunk for? We have had people dunk their cakes for three days before with no issues. All I can say is wait for fruits they're probably fine.

You should be able to powder it with your fingers. Your fingers should get so dusty it looks like you just used them to clean the top of your ceiling fan.
Just not this ceiling fan.

You should be using a dehydrator max temp until cracker dry

I don't know what to say about that pic, I just hope that was an abandoned house from a flood or something and people weren't actually living there.
