Struggling with Pink Oysters might be almost there...

I got a pink oyster mushroom kit as a gift. Very basic grow in toilet paper roll kind of thing. It fluffed up right away with white cotton like stuff, then things got weird. Some of it looked grayish and one part got slimy I was about to throw it away when I noticed that the bottom part that was sitting on the bag had a root looking part and didn't look bad at all. I cleaned off all the questionable parts, and as the instructions stated I put it in refrigerator. Few days later the whole thing turned very pink and I think I have some mushrooms starting. Not sure if they look right or need more air, water, or light to grow right. I have it all in the bag that came with the kit that I have taken to opening every so often when it looks to wet to prevent mold from happening again. It would feel like a success if I could at least see a proper mushroom.

They need more air flow, but otherwise look good.

Second flush was more mushroom shaped but still tiny is there anything to do to make them bigger or is that just dependent on the amount of the substrate?

They're small because the entire substrate is exposed. Not a whole lot you can do about it now, but next time you can just punch a few holes in the bag or cut off the top. The more pins/clusters, the smaller their average size.

The fleshy white stalk without gills is a sign of low oxygen, they're trying to push up higher to drop their spores in the flowing air. If you can't do enough air exchanges, at least put an oscillating fan on them, even on the low setting the air movement will be enough to trigger cap and gill growth.
