agar question

Is it ok to let the agar solidify in jars BEFORE PCing? In all teks I read it says to pour and pc right away but since my tray in the PC is not level I end up with uneven distribution of agar in the jars...

It would just melt again in the pc though, so you should see if there is anyway to level the tray/pc

If you don't have a proper rack for the PC, make one by cutting a 1$ baking pan to size with snips, drilling holes in it and putting a few canning rings on the bottom so it sits level and off the bottom

My big PC came with a couple racks, but I have a smaller one I use if I just want to make a small batch of no pour or sterilize some tools, water ect. The al foil works great, but it always gets full of water and drips all over and not as easy to store, I just end up throwing it away and hate to be wasteful so I made a couple of these and just keep them with my other ones, no pour comes out super level.

I just take mine out and let them cool on the counter.

With the alu foil on or without? And are you using tyvek/silicone for FAE and injection point?
