You're correct about Winter starting. I awoke in the past this morning...It's bloody May already!??
You can tighten the binds and bring her lower. Slowly and carefully bend the stalk and tighten the slack in the string over the next few days-week until it's laying flat.

When should I be looking at harvesting? From what ive read it seems when the trics start turning amber?

Those aren't Trichomes. They're Pistils. 
The Trichomes grow all over the Green parts of the plant. They have a stalk with a round head on top. Those little hairs on the Pistils in your picture are probably there to grab a hold of any airborne pollen and then funnel it down into the Ovary at the base, the little sac that the 'V' shaped Pistils emerge from.
Google up on them, I'd post one but most are from companies selling stuff so can't really post them here. Any questions then please ask.
You've got some weeks to go before harvest. Keep it out of any frost or rain. Frost will burn the buds and any prolonged wet will rot the inside of the buds, especially as they bulk up and air can't get to the middles. Botrytis sucks and can ruin your hard work.
