They all taste very similar.
H. erinaceus (the one people usually grow) forms one solid, unbranched fruit, so it's easier to work with/more versatile in the kitchen.
The wild H. coralloides pictured above was tasty, but the branches were so thin that it practically disappeared in the frying pan.

I have no idea about the difference in medicinal compounds.

I put this in my grow log, but I thought I would share it here too.
I had made some reishi spawn bags 14 days ago, they finished and were 100% 3 days ago on day 11 and today they seem to be fruiting. I went ahead and used it, I don't see a problem.
The grain is milo, an interesting thing is I read in GGMM that the only grain Reishi will fruit off of is milo.
Anyways what do you guys think? This is my first go with Reishi so I surprised to see it fruiting on spawn like that.

Here is 2 days ago right after they seemed finished colonizing

Remember to clean your exhaust fans, especially when growing oysters. This was after just a couple flushes. Also illustrates just how many spores oysters drop and the need to have a proper exhaust system to remove that spore load.

Despite having exhaust set up properly I still will get a layer of spores covering my shop where the grow room is after every flush. That's why I'm moving my oyster op to my friends shop, plus I'm already allergic to the spores, just looking at the picture of your fan gives me a fever.
