Side pinning King oyster - Jar tek

I have 6 sawdust jars of King Oysters(first time growing these) that I am currently fruiting (60F, light and FAE). I scraped the top of the jars when removing the lid and have been waiting for them to start fruiting. I am noticing the sides starting to pin but not the top of the jars. The tops look to be a bit dried, however, I have been misting them so I'm not sure if this is an issue or not.
Should there be any concern? Would they push to the top or maybe the top will fruit eventually?

You need that chamber to be almost fully saturated with humidity. Id be willing to bet your low RH. Highly recommend this hygometer to get dialed in. Kings are some of the harder to grow mushrooms. There is a few reasons why they are called kings...

Could be. I am lowering the temp with a wine cooler to get them to fruit and misting as much as possible. I'll look into that hygrometer. Thanks!

And also they like to pin invitro, with bag culture you let the pins form before opening the bags, I never grew them in jars though, but I bet upping the RH and lowering FAE will get them going.
Here is this from GGMM, the books chapter on Eryngii is great.
Primordia Formation:
Initiation Temperature: 50-60* F (10-15* C) Relative Humidity: 95-100% Duration: 4-5 days ( allow to pin in the bag before opening) CO2: 500-1000 ppm Fresh Air Exchanges: 4-8 per hour Light Requirements: 500-1000 lux Fruitbody Development:
Temperature: 60-70* F (15-21* C) Relative Humidity: 85-90% Duration: 4-8 days CO2: <2000 ppm ( Co2 concenteration will greatly affect shape of the mushroom. 2-4 exchanges per day will give fat long stems while higher FAE will give short stems with larger caps) Fresh Air Exchanges: 4-5 per hour (see above) Light Requirements: 500-1000 lux

Hi Marty,
That's it. I'm ordering that book today. I already have Mycelium Running and the Cultivator.
These are starting to pin on the top and I have them in a wine chiller to meet the proper temps. RH is hard to maintain in there so I'm thinking about putting in the fruiting chamber (martha with reptile fogger and coolmist) but the temps are 70-80. Would that cause a problem for fruiting? Or do you think I should rig something up for the wine chiller to up the RH?

They will fruit fine at the lower end of the 70's, and probably up to 80 but they wont pin that high and they might not perform as well. As far as the RH goes, I fruit them around 85% RH and no misting or very little misting, I had blotch issues when I first started growing them and laid back on the water and that cleared up. A martha should be fine but try not to let them get too saturated with water.
GGMM is great, I have grown my eryngii going by that book from the start, he doesn't suggest casing though and in my experiments with casing they never performed as well as uncased and pinned invitro. Good luck on those dude Keep us updated.
