chocolate trouble

Hey everyone, having some trouble with making Chocolates. I'm using nestle milk chocolate chips and for the life of me I can not get to liquefy. I microwaved and put a bowl over a pot with boiling / simmering water in it and with chips above in the bowl. Both times they turn wet looking powder no matter how hot and how much stiring. I tried uping the microwave time and burned the hell out of what was on the surface. It literally won't liquefy. . Am I using the wrong chocolate or doing something wrong? Any help would be greatly appreciated. So glad I decided not to powder everything yet! Thanks

Mine was a glass bowl.. But it wouldn't even melt in the microwave all that well. I've left chocolate in the car on a hot day that liquefied in minutes with no issue. Not really understanding this shit as simple as I thought and should be.

use a bain marie
your just burning it
if you must use microwave (horrible for chocolate and anything really...) mic at 5-10 second intervals take out stir and repeat until melted to your desired consistency.

for bain marie you want 2 pots one with water one that fits snugly over the other with the chocolate in it..
boil water first to get water to steam thats what you want to hit the 2nd pot not the water but steam to slowly melt the chocolate.
It won't look as nice and might melt at room temps once you resolidify it as you would have to retemper the chocolate to avoid that.

Interesting.. Isn't a bowl on top of a pot though the same thing? Bowl not touching water either.

If the chocolate burns, it doesn't melt. If water gets in the bowl, it doesn't melt, even steam and condensation will do it. You need a lot of patience, and you need to be very careful. Don't let the chocolate get hotter than 90 degrees Celcius.
