Mixed oysters or individual orders to restaurants?

Quick question to fellow commercial growers. Do you offer your restaurants individual choices on oyster mushroom species or just offer them as an assortment of oysters? I have one account that only wants pink oyster mushrooms on a weekly basis. The rest are happy with any assortment I provide.

Typically if i have a mix i send em mixed, Right now its elm and 3015. I just tell them oyster mushrooms. Shiitake, lions mane or any other species i box separately unless they want a mix of everything. One issue i can see with pinks is they are seasonal, so you better get them on track with some cool weather varities unless you can keep your chamber above 65F year round.

Thanks Gr0wer! That's what I figured. I have my website with a description of each species and this was the only customer that just wanted pinks. I told him they were a seasonal species and would no longer be in production in a couple weeks, but he didn't want any others. I can keep my chamber at 65F year round, but will not do so for one account. I used to have a restaurant that did the same thing with produce. We had about 8 varieties of heirloom tomatoes and one account only wanted the reds. Used to annoy the shit out of me.

then drop em if its a hassle, there is demand elsewhere that's more consistent and year round. I know with me its a constant balancing act between accounts and batch sizes, i cant just pick up an account or two for a season i need year round since my production is year round.

If it's worth it theN it's worth it, if they're difficult and not a big customer then that's a good reason to drop them.

offer 3-5lb flats of mixed or individual species depending on your inventory and production. if you're new in the game gotta take those small customers to get your a foot in the business. the 3-5lb flats make any restaurant that takes one worth a stop by, depending on your travel time for delivery of course.

I do 1 lb clam shells with vents, I think they store better and they are more modular for space so restaurants can refrigerate them. My pink oysters are doing really really well in 62-65F, I was pushing it and shocked to see that they were thriving in the cool temps.
EDIT: My mistake,I just check my temps, they are really 64-68F and the pinks are growing better at this temp than when it was 10 degrees warmer.
I just harvested but...

Mixed trays all the way. That way you can alter the mix to what you have. I used to include shiitake, kings and lions - I don't grow any of those any more - and no one complained now it's just 4 varieties of Oyster.
