The first pic looks like a Stropharia.
The one with the bluing might be Flammulina velutipes. I am not sure why the stipes blue sometimes on those, they are not active. I don't think they stain blue, but just are blue sometimes.
The orange spored one might be Galerina or Pholiotina. The stipe texture looks off for the active ones, they have more of a simple white stipe with bluing at the base. No bluing on that one, right?

Can you get some photos that show the bluing at the base of the Galerina?
There is one psilocin containing Galerina known from Germany: http://mushroomobserver.org/observer/show_observation/22405
One was discovered in California too, was brought into a fungus fair in Eureka. However the collection was lost so it's just a rumor.
Your Stropharia are definitely Stropharia and not Psilocybe. You don't get ovoids anywhere near where you live. There might be some undescribed Psilocybes there, they do a look a lot like P. hopii ( http://mushroomobserver.org/name/show_name/29943 ), but I don't think yours are bluing at all.
