Shittake blocks!

People who grow shittakes on a medium commercial size must have large incubating rooms, correct? Say I need 25 blocks a week in the grow room, with a 8 week incubation wait and a what 2 week fruiting time?! That would mean you would need 200 plus blocks incubating in different stages @ all times.
I'm in Seattle and was looking for cheap ready to fruit blocks so I could skip this step of incubating all together but I can't find any sellers out here. All on east coast.

Ive never done commercial grows but I think your math sounds like its in the ball park.
Aloha medicinals has a nice pdf out about the cultivation of shiitake. I cant see, to find a link that will work on this forum but if you google search for "Aloha medicinals shiitake cultivation" the PDF will show up in the top results. You should read that
Also on aloha medicinals website you can download a free version of the mushroom growers handbook which the above pdf is part of. There are two books. Read them both.

This is why oysters are slightly easier for a small scale grower. Less space for incubation and faster. although i do love growing shiitake, they sell fast!

Totally understandable. I think with me having 10'x10' of incubating and I max it out I should be okay. If not I'll rent a heated storage space out here for like 100$ a month. We shall see.

Try "cascadiamushrooms.com". They are at Seattle Farmer's markets most weeks. They may be willing to haul down 25 shiitake blocks a week for a negotiated price.
BTW: they are "Shiitake" mushrooms. no "shit" icluded.
