Chico Nindo Fruiting

Decided to fruit a couple of colonised jars of chico nindo. I have followed the Truffle Tek by violet:

The casing layer I have used is very thin (less than half an inch) of vermiculite/coir The substrate below is straight grain, as the tek said not to mix it with anything.
I have put a bit of cling wrap over the top and done one or two light mistings. My LED globe is a 7.5W, 6500K temperature LED just above.
This is what the setup looks like:

After about a week I can see some spots of mycelium poking through the casing layer
Is there anything else that I should be doing - such as using a fan? I have the AC fan going in the room, but it does not circulate a huge amount of air near the tub.
Thanks for your help or any tips to encourage fruiting

They can take up to 2 weeks to pin at times.
Keep the humidity high until they start pinning. I usually don't really start fanning until it starts pinning.

Just wondering if anyone might know the best type of fan to use once ps. Mexicana and/or galandoi start to pin? I hear that these strains do need some proper air exchange. Would a portable floor-mounted fan be of help or is there something better I should use?

calculate the square footage of the room. then multiply that by how many tubs you have in terms of their root mean squared air exchange potential capacitance. if it's greater than 42,000 you need the O2COOL® 10-inch Portable Fan with AC Adapter
if the number is less than 42,000 you absolutley need to go with the Holmes HBF2010A-WM 21-Inch by 4.5-Inch Box Fan, 3 Speed-Settings, Metal Frame, 20-Inch Blade, White(the only color that works by the way)
.... just pick a fan and adjust as needed. maybe you don't even need a fan

Thanks for the suggestion. Would just running the AC on the fan setting be good enough? It's going to be circulating up a bit higher, but not directly in the tub?

Yeah, I don't see why it wouldn't.. just be sure to fan the tub out once in awhile to introduce fresh air

It has been 18 days since putting down two quarts of spawn. Temperature has not been ideal (59-62F), but I have my 6500K light. Half way through colonisation it looked like the top of the casing layer was drying out, so I gave it a light misting.
This is what my experimental tub looks like? Questions - Should I have kept it in the complete dark with the holes taped during mycelium development, as you would with cubes? Should I have used a different casing layer? Should I be using an exotic airpump system like this guy:?
